good questions. :) the way i see it, the memories are more attached to the body, so it'd be a new personality with the same memories. whether you consider that inherently her or not is pretty philosophical!
as for apple juice, the apple is a pretty basic, common fruit. depending on the quality and type of the juice, she'd probably be generically cute, peppy and simpleminded. if we're talking more sour, she'd probably have more edge or grumpiness to her.
